Hors D' Oeuvres Grilled Baby Octopus Salad Diced Roma Tomato And Lemon And Basil Vinaigrette
First vintage of this 100% Pinot Grigio was 1982 and the Montalcino Tuscan microclimate adds body to the typical aromas as well as intensifies the flavor and balance. The light straw yellow color is coupled with a bouquet that is fresh and fruity with pear, banana, peach, anise and honey notes, and a taste that is rich, full, round and very persistent. Selected grapes are harvested and the temperature-controlled fermentation (15-18°C) of the free-run juice is followed by storage at low temperature all of which leaves a small and natural effervescence. Excellent as aperitif. It accompanies well light dishes and fish in general. “Summer wine”. "A round, lightly floral wine with a fullness and spice that brings lots of appeal. The fruit flavors are completely ripe, edging into the tropical, and the ripeness makes you want to take another sip." - Wine & Spirits

Salad Course Chilled Shrimp And Apple Salad Baby Greens, Sliced Red And Green Grapes With Roasted Walnuts And Red Onions In A Creamy Vanilla Bean And White Balsamic Vainagrette
The straw yellow color with light golden reflections provides a visual start for the bouquet of intense fruit with varietal notes and spicy vanilla hints. The taste is soft, dry with ample sensations of apple, peach and apricot framed by very fine wood. This 100% Chardonnay is estate-bottled with single-varietals, and has been produced since 1982. The whole grape bunches are chilled to 8-10°C prior pressing and de-stemming. The free-run juice is then separated and clarified over 48 hours by cold sedimentation, and only the clear must is used and inoculated with yeasts for the alcoholic fermentation. After fermentation, the room temperature is lowered to 10°C to avoid the beginning of malolactic fermentation. Thanks to the microclimate of the Montalcino vineyards and to the barrel aging that gives this wine an aristocratic aura and is a varietal imbued with complexity. A wine for the entire meal. Ideal with elaborate first courses based on fish and meat. Good aging potential. “Here’s a very pretty Chardonnay with the warmth and intensity of the Tuscan sunshine locked within. The wine opens with attractive softness and lingering aromas of almond and yellow rose.” Wine Enthusiast 90. ""This complex and distinctive Chardonnay from Italy blends toasty, spicy oak aromas with ample fruit and nutty nuances to make a concentrated, focused, nicely balanced whole. Long on the finish and thoroughly enticing."" - Wine Spectator

Cum Laude - Latin for ”with honors” is a full-bodied and extremely concentrated wine with very deep red color, complex aromas of black fruit and spice. It is supple and rich on the palate, with notes of jam, pepper and tobacco. Cum Laude is a micro-vinified wine that is the newest Banfi Super Tuscan that blends 25% of a Banfi clonal selection of the Sangiovese grape with 30% Cabernet Sauvignon, 30% Merlot and 15% Syrah has been unfiltered since the 1998 vintage. The wines are individually vinified and aged 14 months in French oak barrique to develop its unique style, then masterfully interwoven with the others to achieve an elegant bouquet and full, round flavor. Cum Laude is characterized by a rich color and soft, ripe fruit flavors. The wine is complex with aromas of juicy berries and spicy cherries, as well as clove, anise and black pepper. As a full-bodied red with dense tannins, it marries well with all red meats, hearty stews, pasta dishes and cheeses. “This meaty red offers plum, cherry and herb flavors backed by a muscular structure. Dense and tightly wound, with a firm finish, yet nicely balanced.” 90 Points, WINE SPECTATOR

Pasta Course Rigatoni, Sausage, Roasted Fennel And Tomato Pomodoro Grilled Ciabatta Crouton, Basil Chiffonade And Parmesan
This is an intense ruby red 100% Sangiovese with violet reflections. The aromas are fruity with notes of plum, blackberry, violet and a delicate hint of licorice. On the palate it is round and vigorous, with a pleasant finish and an amazing persistence. The growing season started slightly late, followed by abundant rain in May and June. Temperatures in June were cool and well below seasonal averages; in the beginning of July the temperatures began to warm up and became quite hot by mid-month. Temperatures cooled down again in August again with notably cool nights, which significantly contributed to the quality of the fruit, both in terms of aromas and natural acidity. From the middle of August through the months of September and October rainfall was scarce, resulting in a quality harvest. The selected grapes are vinified with an average maceration of 7-10 days. The wine then undergoes an ageing period of 10-12 months, partially in French oak barriques and partially in large Slavonian oak barrels, followed by an additional 6 months in the bottle before release. "The 2010 Rosso di Montalcino flows across the palate with layers of lush, expressive fruit. The wine’s minerality comes through on the mid-palate and finish. I very much like the combination of rich fruit and freshness in this lush, textured Rosso. Banfi aged the Rosso in a combination of French oak barrels and casks. Anticipated maturity: 2012-2016." 90 Points - Robert Parker's Wine Advocate

Rosa Regale is created in one of Italy’s smallest production zones and it is crafted from 100% Brachetto grapes grown exclusively at the La Rosa Vineyard in Piedmont region of Italy. The label features a single red rose, representing the wines origin from this single vineyard La Rosa estate. Rosa Regale has a delicate bouquet of rose petals and offers sensuous flavors of fresh raspberries and strawberries. Its effervescence is softer than that of champagne, yet it yields a persistent and delicate pink froth. Its lively garnet color makes other sparklers pale in comparison. Legend has it that both Julius Caesar and Marc Antony presented Cleopatra with several gourds of Brachetto. The empress then had her lovers drink the wine in order to unleash their passion. Taylor Eason wrote “In my opinion, Rosa Regale is the quintessential romantic wine and chicks seriously dig it — a sweet, rich dessert sparkler from the Piedmont region of Italy. It’s an absolutely perfect sparkling wine for a wedding, served with a decadent wedding cake, or to accompany berry-laden tarts… even ice cream sprinkled with raspberries.”
