Pasta Course Cappellini & Mushroom Bolognese (Baby Portobello Mushrooms With Merlot-Herb And Tomato Ragout With Shaved Parmesan Shards And Fresh Basil)
Ideally situated on the northern border of the Rutherford appellation, the Chicken Ranch Vineyard yields distinctive Merlot with elegant bright fruit, minerality and dried herbs. Here, the grapes enjoy a constant, warm valley floor climate and a unique soil composition that imbue the grapes with the prized hallmark of “Rutherford Dust.” This Merlot is more rustic and old-world in style than other Trinchero Family wines. A pretty wine, it showcases bright black cherry, orange rind and briary black fruit aromas with hints of bittersweet chocolate, lavender, mocha and pepper. Good acidity, firm tannins and integrated oak, lead into a luscious midpalate with a subtle hint of bay laurel. This is an elegant and very approachable wine, an ideal accompaniment to Italian food.

Like its namesake, Mary’s Vineyard has a lot of personality. Located in the recently recognized Calistoga AVA, Mary’s was the very first vineyard purchased by the Trinchero family and holds significant sentimental value. Named to honor Mario Trinchero’s wife, Mary’s Vineyard has aged very gracefully, with balanced vines, moderately fertile soils and excellent sun exposure - ideal conditions to grow Sauvignon Blanc with a tropical character. The wine is fermented entirely in stainless steel, with no oak. It is unmistakably Sauvignon Blanc with subtle hints of candied Meyer lemon peel, wet stone and lemongrass, yet also boasts warm Napa Valley stonefruit and tropical aromas and flavors, including pineapple, passion fruit, mango and honeydew melon. A zesty bright citrus undercurrent carries through to the lip-smacking finish.

Unlike the majority of Trinchero Family wines that are single-vineyard, this wine is a blend of choice lots from several of their prime estate vineyards. They hand select barrels of Cabernet from their Central Park West Vineyard in St. Helena, their Cloud’s Nest Vineyard on Mt. Veeder and their Mario’s Vineyard surrounding the winery in St. Helena; Merlot from their Vista Montone Vineyard in Southern Napa; and Petit Verdot and Cabernet Franc from their Central Park West Vineyard in St. Helena. As a result, this wine is layered and approachable upon release. Cabernet is the backbone, Petit Verdot adds color and aromatics, Merlot contributes to the mid-palate and the aromatics, and Cabernet Franc elongates the finish. It starts with rich dark plum, roasted tomato and baking spice aromas with floral, thyme and cola hints. Concentrated flavors of dried black cherries, allspice and dark plum lead into an opulent and silky mouthfeel with a lingering finish.

Game Course Cabernet Braised Denver Lamb Ribs (Black Cherry And Cabernet Glaze With Bacon And Onion Potato Hash)
Named in honor of Mario Trinchero, this 13-acre vineyard surrounds the flagship winery in St. Helena. Located in a narrow, protected part of the Napa Valley, this vineyard is bench land off the slope of Spring Mountain, with a unique rocky composition ideally situated to growing stellar Cabernet Sauvignon. This jewel of a site is sustainably farmed and produces elegant wine with floral aromas, bright red fruit flavors and a supple, satisfying texture. The fruit from this benchland area of St. Helena has great structure and velvety tannins. On the nose, there is sweet white floral, crushed anise seed and mineral aromas followed by dark cherry, fig jam, toasted brioche and savory flavors. It is an elegant and pretty wine with firm tannins.

NOTE: THIS WINE OFFERED AT AN ADDITIONAL $10 FOR FULL POUR. High above the Napa Valley floor in the Maycamas Mountains, the Cloud’s Nest Vineyard embodies the greatness of the Mt. Veeder appellation. This high altitude vineyard is incredibly steep with gravelly soil, and like all their vineyards, must be patiently farmed by hand. Its’ cool, eastern exposure allows for extended hang time, which imbues the grapes with greater complexity and character. Above the fog line at 1,500 feet, this is an incredibly beautiful, yet stressed vineyard that produces trademark Mt. Veeder characteristics. It starts with aromas of rich dark plums, dried herbs, grilled game and tea with forest floor undertones. Concentrated flavors of dried black cherries and wild blackberries are coupled with hints of clove and blackstrap molasses that lead into an opulent mouthfeel with chewy, lingering tannins.
