Hors D'oeuvres Chicken Meatball with Arugula Pesto One Bite Caesar Salad
Varietal composition: 100% Chardonnay This Chardonnay is 50% barrel fermented in French, Slavonian, and Hungarian oak barriques, and 50% in stainless steel. Fermentation is allowed to take place over the course of 3-4 weeks, after which the wine is stirred on the lees in a labor-intensive practice referred to as Battonage, resulting in a rich finish. 50% of the wine undergoes malolactic fermentation, while the remainder does not. Both rich and focused, the 2023 vintage continues to consistently elevate Lava Cap’s Chardonnay. The nose is filled with Myer lemon and green apple, framed by a backdrop of brioche, vanilla, and flinty stone.

Salad Course Sautéed King Oyster Mushroom with Bleu Cheese, Watercress and Cherry Vinegar Gel
Varietal Composition: 100% Barbera Barbera, a grape native to the rolling hills of Northern Italy, thrives in the Sierra Foothills, and particularly on our volcanic soil at our elevation of 2,700ft. The combination of warm days, cool nights, and rocky, steep hillsides allow us to make a rich, yet elegant wine that showcases notes of vanilla, cherry, and earth. Juicy, bright berry flavors fill the rich full-bodied mouth. Light tannins allow for a long soft finish.

Eggplant Course Eggplant Rollatini with Ricotta, Smoked Tomato Puree and Crispy Basil
Varietal Composition: 100% Syrah This Syrah Vineyard grows on a beautiful south facing slope. The cooling breezes from the vineyards 2600' elevation, the ample sunlight, and the deep, well-draining volcanic soils allow this Syrah to showcase both floral and savory aromas. Dense and rich, but incredibly complex, the 2019 Estate Syrah showcases rich aromas of cassis, violets, and clove, framed by dark chocolate and olive tapenade. Very age worthy, but with refined tannins and a vibrant finish that make this wine approachable now.

Beef Course Beef Short Rib with Korean BBQ, Sticky Rice and Creamy Cucumbers
Varietal Composition: 100% Petite Sirah. The 2020 Petite Sirah has notes of elegant wild licorice, blueberries, and complex oak. With a sip, the massive wine slams the palate with a stampede of plum and white pepper flavors which perfectly transition to blackberry and a long vanilla-cola finish. Wine Enthusiast 91 points.

Dessert Course Blackberry Cobbler
Varietal composition: 100% Cabernet Franc This dark, age worthy wine shows notes of dark fruit compote, blackberry pie, and cassis. The powerful wine continues on the palate with plush tannins, and a vibrant finish framed by flavors of vanilla and clove. Fermented in stainless steel and aged in first and second fill 100% French oak, this well-structured wine will age well for 10-15 years, but is ready to drink upon purchase.
