Hors D’oeuvres Serrano Ham, Manchego Cheese Croquettes with Sun-Dried Tomato Aioli and Piquillo Pepper Relish
Varietal composition: 100% Sauvignon Blanc 2022 was a warm and early harvesting year for Sauvignon Blanc. Most of the fruit of this wine came from the middle reach of the Russian River. The coolness of the area allows us to pick ripe fruit that still has great acidity. This wine is a special bottling that really showcases the region. Aromas of orange blossom and fresh apple. The palate is crisp with stone fruit, apple and lemon peel. Bright and compelling. Crisp and clean. This wine pairs well with a wide range of foods including shellfish, pasta with lemon sauces or can be enjoyed on its own.
Cloisonne Sauvignon Blanc 2022
Salad Course Lobster and Maryland Blue Crab Cake with Lobster Saffron Velouté, Heirloom Tomato, and Arugula Salad and Basil Oil
Varietal composition: 100% Chardonnay In 2022 was a warm harvest year in California with average yields. The fruit of this wine came from Sonoma’s Los Carneros region. The close proximity to the San Pablo Bay makes this the perfect spot to grow the Wente clone. The warm days and cool nights at harvest made this an amazing year for Chardonnay. Golden yellow in color. Rich aromas of granny smith apple, white flowers and citrus notes. Silky texture with flavors of apple, citrus, minerality and a wisp of oak. Finishes with a full and lingering expression of Chardonnay. Pair with roasted chicken, salmon or richer seafood dishes. Also, perfect to drink on its own as an aperitif.

Pork Course Prosciutto Wrapped Pork Tenderloin with Horseradish Pomme Puree, Roasted Root Vegetables, Braised Savoy Cabbage, Pioppino Mushrooms and Whole Grain Dijon
Varietal composition: 100% Pinot Noir This wine exhibits the balance that is a hallmark of our Pinot Noir. Gentle handling and use of French oak created an engaging wine. Bright crimson in color. Earth, spice and floral aromas jump out of the glass. Strawberry, dark cherry and flavors are vibrant and engaging. Firm acidity and spice notes on the finish. Bright and intense in flavor, but very well balanced. This wine pairs well with a wide range of foods from salmon, roasted chicken, rich pastas or can be enjoyed on its own.

Beef Course Petite Filet Mignon with Wild Mushroom Savory Bread Pudding, Parsnip Puree, Roasted Root Vegetables and a Red Wine Demi-Glace
Varietal composition: 100% Pinot Noir Dark crimson in the glass. Aromas of smoky spice, sandalwood, pine and berries. Lush flavors of deep dark cherry, red berries, and spice. Silky texture that lingers on the long finish.

Dessert Course Chocolate Ganache Tarte with Vanilla Cream and Marinated Cherries
Varietal Composition: 100% Red Blend (Zinfandel, Cabernet Sauvignon, Syrah, Malbec, Cabernet Franc, and Merlot ) Deep purple hues in the glass. Features engaging aromas of black cherry, brown sugar, anise, and cedar. Ripe flavors of ripe cherry, cassis, red licorice, graphite, caramel and warm oak linger. Bright acidity and fine-grained tannins make this serious wine that also provides immediate enjoyment.

Chip Wine
Varietal Composition: 100% Petite Verdot Deep purple in the glass, aromas of raspberry, cedar and floral notes. Soft velvety tannins and rich plum, dark berry and spice on the palate. Offers a lingering and complex finish. A great example of what Sonoma can do with this varietal.
