Hors D’oeuvres Southern Style Crab and Shrimp Salad with Fresh Dill, Cajun Seasoning and Puff Pastry Shell
Varietal composition: 100% Chardonnay The 2023 vintage delivered abundant rainfall and moderate temperatures, allowing for steady ripening of the fruit, yielding concentrated flavors with beautifully bright acidity. The fruit was harvested October 4th - 31st, 2023 in the cool, early morning hours to preserve vibrant fruit character of this year’s crop. The 2023 Russian River Valley Chardonnay opens with aromas of spice, baked pear, brioche, hazelnut, vanilla, and a touch of pineapple. The palate is smooth and rich, offering toasted almond and peach, with refreshing acidity and flinty minerality on the finish.

Poultry Course Barbacoa Chicken Thigh with Warm Potato Salad and Fire Roasted Corn Relish
Varietal composition: 56% Cabernet Sauvignon, 17% Zinfandel, 11% Syrah, 5% Tannat, 3% Carignan, 3% Grenache, 3% Mouvedre, 2% Merlot An enticing nose of roasted coffee, cherry and baking spices with notes of violet, forest bark and a whisper of sage. On the palate it is a mouthwatering mélange of juicy pomegranate and dried cherry flavors backed by balanced acid, bold structure and violet tones giving way to a smooth, round finish.

Beef Course Smoked Brisket Mac and Cheese with Sharp Cheddar Mornay and Onion Straws
Varietal composition: 96% Merlot, 4% Cabernet Sauvignon Deep ruby red in the glass, the flagship Swanson Merlot opens with ripe red fruits, silky cherry, raspberry, and juicy plum. Smooth and velvety on the palate, the wine is medium to full-bodied offering a well-balanced combination of fruit flavors and refined tannins. Ripe red and dark fruits continue to dominate, complemented by hints of chocolate and tobacco. The wine's structure provides an elegant and approachable finish that makes it age worthy for up to 10 years.

Pork Course Braised Pork “Wing” with Jicama Slaw and Blueberry Glaze
Varietal composition: Cabernet Sauvignon 80% | Malbec 10% | Merlot 10% The Knight’s Valley Cabernet Sauvignon opens with aromas or rich plum, cassis, dark toffee, nutmeg and cedar. Bold, full and round, the palate bursts with black cherry cobbler, cocoa nibs, fresh leather with a hint of anise. This wine is refined and age-worthy.

Dessert Course Deconstructed Peach Cobbler with Raspberry Whipped Cream
Varietal Composition: 98.4% Pinot Noir, 1.6% Pinot Blanc The 2023 Rosé of Pinot Noir is a beautiful light pink color with a touch of rouge. Aromas of wild strawberry, lime peel, and layers of tropical fruit set the tone for this delightful rosé. The palate shows bright and crisp acidity, with surprising depth of flavor. It’s a perfect pairing for grilled fish, terrine, soft cheeses, and Thai food.

Varietal Composition: 100% Cabernet Sauvignon Aromas of crushed wild blueberries and vanilla, boysenberry, and herbal nuances of tobacco and bay leaf. Full-bodied with a focused core of fresh berries and tart cherries intertwined with rich dark cherry liquor flavors. Finely textured powdery tannins and the signature Stags Leap District graphite and mineral notes are well-knit with the fruit and lightly toasted oak, with hints of black pepper and cedar on the finish.
