Course Pairing / Description Wine
Hors D’oeuvres Tart Ratin of Jambon de Paris with Heirloom Tomato, Crème Fraiche, Comte, and Arugula
Varietal composition: 100 % Sauvignon Blanc With a pale gold hue, this wine captivates with its powerful nose, revealing grapefruit and blackcurrant aromas. On the palate, it delivers a refreshing experience, with delicate citrus notes that linger in the finish. This wine pairs beautifully with aperitifs, charcuterie boards, crudites, flavorful fish (such as pike-perch), white meats, and goat cheeses.
Château de Pont Touraine Sauvignon 2023
Seafood Course Skate Wing with Buerre Noisette, Toasted Almonds, White Bean & Tomato Salad, and Cauliflower
Varietal composition: 100% Chenin Blanc The wine opens with bright fruit aromas of apricot and pear, with an off-dry palate framed by fresh flavors of apricot and stone fruit. The subtle sweetness is balanced nicely with this wine’s hallmark bright acidity.
Le Petite Perroy Vouvray 2022
Beef Course Tartar of Beef with Mustard Vinaigrette, Chervi, and Focaccia
Varietal composition: 50% Grenache, 45% Syrah, 5% Cinsault Complex nose with aromas of liquorice, camphor, pepper and black fruits mingle with surprising notes of Indian ink and gouache. On the palate we find a smooth harmony; a suave and charming balance marked by a graphite, mineral touch. We are certainly in the sublime. This wine goes perfectly with grilled red meat or meat in sauce.

Poultry Course Red wine Braised Poulet with a selection of Wild Mushroom, Celery Root “Steak”, and Roasted Carrot Foam
Varietal composition: Cabernet Sauvignon 35%, Merlot 65% Château Chemin Royal 2018 shows a beautiful deep garnet color, the nose is powerful with lots of red and black berries and a light, well integrated oak touch. There is a lot of complexity here. The palate is well balanced, with a supple structure, a great freshness and good length. This wine can be paired with grilled red meat, and it also goes very well with cheese.

Dessert Course Parisian Chocolate & Espresso Gateu
Varietal Composition: Syrah 40%, Grenache 40%, Carignan 20% The whole cluster maceration brings a lot of freshness and depth to the wine: the balance is perfect, between power and elegance. A wine with a very good ageing potential. Perfect accompaniment for lamb shoulder seasoned with thyme.
Château D'Orsan Cotes du Rhone 2022
Chip Wine
Varietal Composition: 55% Grenache, 45% Syrah Garnet color, raspberry reflections, and a deep intensity. Complex nose of jammy fruit, burlat cherry and blackberry. Aromas of vanilla, sweet spices, cinnamon, complete this gourmet nose. The supple attack is followed by richness and an intense fragrance of wild red fruits. The lingering finish brings fine bitters of great sapidity and aromas of cocoa and tonka bean. Perfect harmony. Once well opened, or with ageing, notes of morello cherries appears and the wine becomes more assertive. This wine goes perfectly with Grilled rib of beef with truffle mashed potatoes.
